Butter-Roasted Sweet Potatoes
These butter-roasted sweet potatoes are a delicious and easy weeknight side dish. The butter and olive oil create a crispy exterior while keeping the insides tender and flavorful. Perfect for pairing with any main course.
Ingredients:
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons butter, melted
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish optional
Instructions:
Get the oven ready by heating it up to 400F 200C
Melt the butter and add the olive oil, minced garlic, dried thyme, salt, and pepper to a large bowl
Toss the sweet potato cubes in the bowl until they are covered all over
Place the sweet potatoes on a baking sheet so that they are all in one level
Put the vegetables in a hot oven and roast them for 25 to 30 minutes, or until they are soft and caramelized
Flip them over halfway through
If you want, you can add chopped fresh parsley as a garnish before serving
