Low Carb Egg Noodles



These low carb egg noodles are a perfect gluten-free and keto-friendly alternative to traditional pasta. They are easy to make and incredibly versatile, allowing you to enjoy your favorite pasta dishes without the guilt.

Ingredients:

  • 4 large eggs
  • 4 oz cream cheese, softened
  • 1/4 cup coconut flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt

Instructions:

In a bowl, beat the eggs and cream cheese until smooth

Add coconut flour, Parmesan cheese, xanthan gum, and salt

Mix until well combined

Let the dough rest for 5 minutes to allow the coconut flour to absorb moisture

Preheat oven to 375F 190C and line a baking sheet with parchment paper

Spread the dough thinly and evenly on the parchment paper

Bake for 8-10 minutes, or until set and lightly golden

Remove from the oven and let it cool for a few minutes

Using a pizza cutter or sharp knife, cut the dough into thin strips to resemble noodles

Serve with your favorite keto-friendly pasta sauce or toss with olive oil and herbs
