Black Forest Coffee Cake Muffins



Indulge in the rich flavors of a Black Forest coffee cake, transformed into delightful muffins. These moist and chocolaty treats are studded with sweet cherries and chocolate chips, making them a perfect companion to your morning coffee or an anytime sweet indulgence.

Ingredients:

  • 1 cups all-purpose flour
  • 1 cup granulated sugar
  • cup unsweetened cocoa powder
  • 1 tsp baking powder
  • tsp baking soda
  • tsp salt
  • 1 cup sour cream
  • 2 large eggs
  • cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup pitted and chopped sweet cherries
  • cup semisweet chocolate chips
  • cup chopped pecans optional
  • Whipped cream for topping optional

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt

In another bowl, mix together the sour cream, eggs, vegetable oil, and vanilla extract until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix

Gently fold in the chopped cherries, semisweet chocolate chips, and chopped pecans if using

Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely

Optional: Top each muffin with a dollop of whipped cream and a cherry for that Black Forest flair
