Kale Quinoa Pomegranate Salad
This salad is both healthy and refreshing. It has quinoa for its nutritional value, pomegranate for its bright flavors, and kale for its health benefits. It is all mixed together in a tasty balsamic vinaigrette.
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 4 cups kale, stems removed and chopped
- 1 cup pomegranate arils
- 1/2 cup feta cheese, crumbled
- 1/3 cup extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
Put the quinoa and water in a medium-sized saucepan
Once it starts to boil, lower the heat, cover, and let it cook for 15 minutes, or until all the water is gone
Use a fork to fluff it up, then let it cool down
Put cooked quinoa, pomegranate arils, chopped kale, and crumbled feta cheese in a large bowl
Salt and pepper should be mixed with honey, olive oil, balsamic vinegar, and pepper in a small bowl
Pour the dressing over the salad and toss it around until it's well covered
Serve right away or put in the fridge until you're ready to serve
